The amaebi ( raw shrimp, $ 5.95 ) is sweet and delicate, topped with a neon-orange dusting of tobiko ( fish eggs ) ; juxtaposing the raw and the cooked, the crisp deep-fried heads from the shrimp are presented a few minutes later to complete the dish. more»
